Air Fryer Salmon with Roasted Sweet Potatoes and Sautéed Spinach
Ingredients:
6 ounces of salmon fillet
2 small sweet potatoes, peeled and cut into cubes
1 tablespoon of olive oil
1 teaspoon of paprika
1/2 teaspoon of garlic powder
Salt and black pepper to taste
4 cups of fresh spinach leaves
2 cloves of garlic, minced
Lemon wedges for serving
Instructions:
Preheat the air fryer to 400°F (200°C).
Place the cubed sweet potatoes in a mixing bowl. Drizzle with olive oil and sprinkle with paprika, garlic powder, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
Transfer the seasoned sweet potatoes to the air fryer basket, spreading them out in a single layer. Cook for about 15-20 minutes, shaking the basket halfway through, or until the sweet potatoes are tender and golden brown.
While the sweet potatoes are cooking, season the salmon fillet with salt, black pepper, and a drizzle of olive oil.
Once the sweet potatoes are done, remove the basket from the air fryer and place the seasoned salmon fillet on top of the sweet potatoes. Return the basket to the air fryer.
Cook the salmon and sweet potatoes for about 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
While the salmon and sweet potatoes are cooking, heat a drizzle of olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
Add the fresh spinach leaves to the skillet and cook until wilted, stirring occasionally. Season with salt and pepper to taste.
Once the salmon, sweet potatoes, and spinach are ready, serve them together on a plate. Squeeze fresh lemon juice over the salmon for added flavour.
